The Ingredients

  • 2 Tbsp Peanut Butter

  • 2 Tbsp Miso Paste

  • 1 Tsp Sesame Oil

  • 1 Tbsp Gochujang

  • 2 Tsp Garlic Powder

  • 1/4 Cup Soy Sauce

  • 1 Block Tofu

  • 4-5 packs of ramen noodles (1 for every meal prep jar) *

  • 4 scallions

  • Optional: Nori flakes

*My personal favorite is Ocean's Halo Organic Ramen Noodles

The Recipe

  1. Prepare the tofu: Wrap the tofu in a paper towel or clean kitchen towel to absorb excess moisture, then set aside.

  2. Make the miso paste: In a small mixing bowl, combine peanut butter, miso paste, sesame oil, gochujang, garlic powder, and soy sauce. Whisk until smooth and well combined.

  3. Assemble the jars: Divide the miso paste evenly among your meal prep jars. Layer the pre-cut mushrooms and cabbage on top of the paste, followed by the tofu. Finish by placing the uncooked ramen noodles on top.

  4. Store: Seal the jars and refrigerate until ready to eat.

  5. To serve: Pour boiling water into the jar until the noodles are fully submerged. Top with sliced scallions and optional nori flakes, then enjoy!
